A crunchy, homemade granola perfect for a quick breakfast or snack, made effortlessly in the air fryer.

Ingredients

Dry ingredients

  • 2 cups rolled oats
  • 1/2 cup mixed nuts (roughly chopped) (almonds, cashews, pecans)
  • 5 tablespoons seeds (pumpkin and sunflower)
  • 3 tablespoons honey
  • 2 tablespoons maple syrup
  • 3 tablespoons coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 tablespoons shredded coconut
  • 1/3 cup dried cranberries (or mix-ins)

Instructions 

  • Mix honey, maple syrup, coconut oil, vanilla, cinnamon, and salt.
  • Combine dry ingredients in a large bowl, then add wet mixture and coat evenly.
  • Line air fryer basket with parchment and press granola mixture into an even layer.
  • Air fry at 300°F (150°C) for 8 minutes.
  • Scatter shredded coconut on top and air fry for another 5-6 minutes until golden.
  • Cool on a wire rack, then toss with dried cranberries and store.

Notes

Store in an airtight container for up to one month.
