A flavorful Middle Eastern-inspired dish combining bulgur, zucchini, and herbs for a hearty, nutritious meal.

Instructions
Rinse the bulgur and set aside.
Heat oil in a large pot, cook zucchini with salt and pepper for 5 minutes.
Add rinsed bulgur to toast for 2 minutes. Mix in chopped cilantro and minced garlic, cook for 1 minute.
Pour in broth, bring to boil, then reduce heat, cover, and simmer for 30 minutes.
Rest for 10 minutes, then fluff with a fork and serve.
Notes
You can serve this dish with a side salad or vegan yogurt sauce for added flavor.
