A flavorful Middle Eastern-inspired dish combining bulgur, zucchini, and herbs for a hearty, nutritious meal.

Ingredients

  • 2 cups white coarse bulgur (rinsed)
  • 1/4 cup olive oil
  • 2 large zucchini (small dice)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 bunch cilantro (finely chopped)
  • 6 cloves garlic (finely minced or grated)
  • 4 cups beefless broth or water

Instructions 

  • Rinse the bulgur and set aside.
  • Heat oil in a large pot, cook zucchini with salt and pepper for 5 minutes.
  • Add rinsed bulgur to toast for 2 minutes. Mix in chopped cilantro and minced garlic, cook for 1 minute.
  • Pour in broth, bring to boil, then reduce heat, cover, and simmer for 30 minutes.
  • Rest for 10 minutes, then fluff with a fork and serve.

Notes

You can serve this dish with a side salad or vegan yogurt sauce for added flavor.
