A delicious and nutritious baked dish combining ricotta, spinach, and cheese for a satisfying dinner.

Ingredients

Dairy

  • 500 g Ricotta cheese, part-skim (about 2 cups)
  • 150 g Mozzarella, shredded, part-skim (about 1.5 cups, divided)
  • 50 g Parmesan, grated (about 1/2 cup, divided)

Vegetables

  • 300 g Fresh spinach (or 250 g frozen, thawed and squeezed dry)

Other

  • 3 large Eggs
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1/8 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tsp Dried oregano or Italian seasoning

Instructions 

  • Preheat oven to 190°C / 375°F and grease a baking dish.
  • Sauté garlic in olive oil, add spinach, and cook until wilted. Cool and squeeze out excess liquid, then chop.
  • Whisk ricotta and eggs, then mix in half the mozzarella, half the parmesan, salt, pepper, nutmeg, and oregano.
  • Fold in chopped spinach, pour into baking dish, and top with remaining cheese.
  • Bake for 30-35 minutes until golden and center reaches 74°C / 165°F. Rest 10 minutes before slicing.

Notes

Use fresh spinach for best flavor, and squeeze out excess moisture thoroughly.
