Instructions
Preheat oven to 190°C / 375°F and grease a baking dish.
Sauté garlic in olive oil, add spinach, and cook until wilted. Cool and squeeze out excess liquid, then chop.
Whisk ricotta and eggs, then mix in half the mozzarella, half the parmesan, salt, pepper, nutmeg, and oregano.
Fold in chopped spinach, pour into baking dish, and top with remaining cheese.
Bake for 30-35 minutes until golden and center reaches 74°C / 165°F. Rest 10 minutes before slicing.
Notes
Use fresh spinach for best flavor, and squeeze out excess moisture thoroughly.
