A hearty and healthy one-pot minestrone soup perfect for a quick, comforting meal. Loaded with vegetables, beans, and pasta, it's easy to make and customizable.

Ingredients

Vegetables and Broth

  • 1-2 Tablespoons olive oil
  • 0.5 cup finely chopped onion (plus more if desired)
  • 0.5 cup finely chopped celery
  • 2-3 teaspoons minced garlic (about 4 cloves)
  • 4 cups chicken broth (or vegetable broth)
  • 1-2 cups water
  • 4 cups seasonal vegetables (potatoes, zucchini, green beans, squash, carrots)
  • 1 14-ounce can diced fire roasted tomatoes
  • 0.25 cup tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Kosher salt
  • 0.25 teaspoon freshly ground black pepper (optional)
  • 1 15-ounce can kidney beans or white beans (drained and rinsed)
  • 1 cup uncooked small pasta shells
  • 1-2 cups baby spinach (optional)

Instructions 

  • Heat oil in a large pot over medium heat. Cook onion until translucent, then add celery and garlic, cooking for another minute.
  • Add broth, water, vegetables, tomatoes, and tomato paste. Season with Italian seasoning, salt, and pepper. Bring to a boil, then simmer for 10 minutes.
  • Stir in beans and pasta. Cook until pasta is al dente, about 8-10 minutes. Add hot water if too thick.
  • Remove from heat, stir in spinach until wilted, then serve hot.

Notes

Feel free to customize with your favorite vegetables or add grated Parmesan and fresh basil for extra flavor.
