A flavorful and quick-to-make dish combining couscous with vibrant Mexican-inspired spices and vegetables.

Ingredients

Oil and Vegetables

  • 1 tbsp olive oil
  • 0.25 cup yellow onion, chopped fine
  • 0.25 cup bell pepper, diced
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp oregano
  • 0.5 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 14.5 oz can diced fire roasted tomatoes, drained
  • 0.5 cup black beans, drained and rinsed
  • 1 cup low sodium chicken or vegetable broth
  • 1 cup instant Moroccan couscous
  • 0.25 cup fresh chopped cilantro
  • 0.5 lime lime, juiced

Instructions 

  • Heat a skillet, sauté onions and peppers until softened.
  • Add spices, toast for 1 minute, then add broth, tomatoes, and beans. Simmer for 3-4 minutes.
  • Stir in couscous, remove from heat, cover, and let sit for 10 minutes.
  • Fluff with a fork, add lime juice and cilantro, toss, and serve.

Notes

Feel free to customize with your favorite vegetables or toppings.
