2tablespoonsOlive Oil(or avocado oil)
0.75CupChicken Broth(or vegetable broth)

1.5CupWater or broth(to cook the couscous)

1CupCherry Tomatoes(cut into quarters)

0.33CupGreek yogurt

Instructions
Bring 1.5 cups of water or broth to a boil, then stir in the couscous, cover, and remove from heat. Fluff after steaming.
Mix Moroccan spices in a bowl. Season chicken with spice mix and 1 tablespoon oil, then cook in a skillet until browned and cooked through, about 7 minutes.
Add tomato paste and broth to the chicken, simmer until sauce thickens, about 5 minutes. Season with salt and pepper.
Prepare veggie salad with cucumber, cherry tomatoes, and red onion. Toss to combine.
Divide couscous, chicken, and veggies into bowls. Top with chopped parsley and a dollop of Greek yogurt. Serve and enjoy!
