Instructions
Heat oil in a large pot and sauté onion until softened.
Add garlic and ginger, cook until fragrant, then stir in spices and cook for 30 seconds.
Pour in tomatoes, chickpeas, potatoes, and broth; season with salt and pepper. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes until potatoes are tender.
Stir in garam masala, adjust seasoning, garnish with cilantro and yogurt if desired. Serve hot.
