A vibrant and customizable sushi bowl combining seasoned rice with fresh vegetables, crab, and spicy mayo for a quick, delicious meal.

Ingredients

Rice and Water

  • 2 cups sushi or Calrose rice
  • 2 cups water

Vinegar Mixture

  • 3.5 tablespoons rice vinegar
  • 2 tablespoons granulated sugar
  • 1 teaspoon kosher salt

Toppings

  • 1 pound flake-style imitation crab (diced)
  • 4 pieces Persian cucumbers (or 1 English cucumber, halved and sliced)
  • 2 cups shredded carrots
  • 2 to 4 nori sheets or seaweed snacks
  • 2 small avocados (diced)
  • to taste Sesame seeds (optional)
  • to taste Pickled ginger (optional)
  • to taste Soy sauce (optional)
  • ⅓ cup plain Greek yogurt (or mayo)
  • 1 to 2 tablespoons sriracha

Instructions 

  • Rinse rice, cook with water, then let sit covered for 5 minutes.
  • Mix vinegar, sugar, and salt; warm and stir until dissolved. Combine with rice and cool.
  • Prepare spicy mayo by mixing Greek yogurt and sriracha.
  • Assemble bowls: place rice, then top with crab, cucumber, carrot, nori, and avocado. Drizzle with spicy mayo.
  • Garnish with sesame seeds, pickled ginger, and serve with soy sauce if desired.

Notes

Feel free to customize toppings and spice level to your preference.
